    Sweet Potato Cornbread Stuffing


    2 c sweet potatoes -- peeled and chopped
    1 c onion -- chopped
    1 c celery -- sliced
    1/4 c butter or margarine
    1 tb cilantro -- snipped
    1 t ground ginger
    5 c cornbread -- coarse crumble
    3/4 c walnuts -- chopped
    2 tb chicken broth -- or turkey broth (up to 4 tb)

    Recipe




    In a large skillet cook sweet potatoes, onion and celery in hot margarine or butter for 5-7 minutes or till just tender.

    Spoon mixture into a large mixing bowl.

    Stir in cilantro and ginger.

    Add cornbread and walnuts, toss gently to coat.

    Add enough chicken broth to moisten.

    Use to stuff one 8-10 lb bird or place stuffing in a casserole.

    Bake casserole uncovered.

    In a 375 F oven for about 45 minutes or till heated
    through.

    Yield: 6 servings.
