Football Cupcakes with Grass
CUPCAKES---
1/3 cup unsweetened cocoa powder
2 eggs
1/2 cup lowfat cream cheese
1/2 cup unsalted butter
1/2 tsp salt
2 1/4 cups flour
1 tsp vanilla
1/2 cup boiling water
1 1/3 cups sugar or sugar substitute
1/2 tsp baking powder
1 tsp baking soda
DECORATIONS---
16 chocolate covered almonds for the footballs
1 tsp vanilla
2 cups powdered sugar
1/2 cup unsalted butter
Green food coloring for the grass
2 tbs lowfat milk
1/2 cup lowfat cream cheeseRecipe
CUPCAKES
Heat oven to 325 degrees.
Line 16 cups of 2 muffin tins with paper liners.
Blend flour, baking soda, salt and baking powder in a bowl.
In a bowl, beat butter and sugar.
In a separate bowl, beat cream cheese with 1/4 cup boiling water.
Beat eggs into butter mixture.
Beat in vanilla.
BEAT in half the flour mixture, then cream cheese mixture, followed by remaining flour mixture.
Remove 1 cup batter to a bowl.
Whisk remaining boiling water into cocoa powder.
Fold into smaller portion of batter.
Fill cupcake liners half full of vanilla batter.
Divide chocolate batter among cups.
Swirl.
Bake 20 min.
Cool on a wire rack.
DECORATIONS
Beat butter and cream cheese until smooth.
Beat in powdered sugar, milk and vanilla.
Separate 1/2 cup of the frosting, place in plastic bag.
Tint remaining frosting green.
Transfer to a piping bag fitted with a star tip.
Pipe onto cupcakes to resemble grass. ]
Snip a tiny corner off bag with white frosting, pipe lines and numbers on cupcakes to resemble yard lines.
Place a chocolate covered almond on each cupcake for the football, pipe on laces with white frosting, then SERVE
MAKES 16 FOOTBALL CUPCAKES.
