    Baby Broccoli with Orange Sauce


    2 bunches baby broccoli, (1 1/4 pounds), ends trimmed
    Orange Sauce (recipe below)
    2 tablespoons butter
    1 clove garlic, finely minced
    1/2 teaspoon salt
    1 tablespoon orange zest

    Orange Sauce:

    1/2 cup orange juice
    2 teaspoons honey
    1 teaspoon Dijon mustard
    1 clove finely minced garlic
    1 1/2 teaspoons cornstarch
    1/4 teaspoon salt.

    In large kettle or Dutch oven, bring 3 quarts water to a boil; add broccoli. Return to a boil, boil until crisp-tender (about 2 minutes); drain.

    Immediately plunge into ice water until cold. Refrigerate, covered, if desired.

    To Serve:

    Prepare Orange Sauce. In large skillet, melt butter over medium heat; stir in garlic. Saute just to soften, but not brown. Stir in broccoli; cook until heated through (6-8 minutes), stirring often. Stir in salt. Spoon onto warm serving dish; top with Orange Sauce. Sprinkle with orange zest.

    Amount: 6 servings

    Orange Sauce:

    With zester, remove 1 tablespoon zest from a medium orange; reserve for garnish.

    Squeeze 1/2 cup juice from orange.

    In small saucepan combine 1/2 cup orange juice, 2 teaspoons honey, 1 teaspoon Dijon mustard, 1 clove finely minced garlic, 1 1/2 teaspoons cornstarch and 1/4 teaspoon salt.

    Bring to a boil over medium heat, stirring constantly.

    Boil until thickened (about 1 minute), stirring constantly.
