    Mixed vegetables are convenient for adding to soups and casseroles.

    List of Ingredients




    Basic Zucchini-Vegetable Mix


    2 tablespoons butter or extra virgin olive oil
    I cup diced celery
    1 cup minced onion
    2 cups chicken or vegetable broth
    2 cups sliced or diced carrots
    2 cups sliced or diced zucchini or other summer squash
    1 cup corn kernels
    1 cup chopped green bell pepper
    Salt and freshly ground black pepper

    Recipe




    1. Melt the butter in a large skillet over medium-high heat. Add the celery and onion. Saute until softened, 3 to 5 minutes. Add the broth and carrots. Simmer for 20 minutes.

    2. Add the zucchini, corn, and bell pepper to the skillet. Simmer for 10 minutes.

    3. Season to taste with salt and pepper. Cool briefly. Pour into freezer containers, leaving 1/2 inch of headroom for expansion. Freeze for up to 3 months.

    Makes about 8 cups
