Blue Cheese Beets
8 beets
4 Tablespoons Red Wine Vinegar
2 Tablespoons "Lite House" Blue Cheese Dressing
Optional: 2 tablespoons crumbled blue cheese
Recipe
Boil beets for about 20 minutes.
Blanche in cold water.
Peel beets and quarter them.
Put the beets in a bowl and sprinkle red wine vinegar over the top and mix around.
Put bowl in fridge for 2 hours.
Take out and add blue cheese dressing and blue cheese and mix.
Serve over romaine lettuce..like a taco! Yummy!!!
