    Braised Greens


    2 bunches lacinato kale (about 1 pound), stems removed
    2 teaspoons olive oil
    3 garlic cloves, minced
    1 medium onion, thinly sliced
    2-3 tablespoons vegetable or chicken stock
    ½ tsp salt
    ¼ teaspoon red pepper flakes
    Apple cider vinegar

    Stack several kale leaves at a time and roll them up tightly, lengthwise, like a cigar.

    Thinly cut the rolled kale crosswise (chiffonade) creating thin ribbon strips and set aside.

    Repeat until all the kale is chiffonade.

    Heat the olive oil in a large skillet over medium-high heat and add the onion slices stirring until they are coated with the oil.

    Allow the onion slices to cook, stirring occasionally until they begin to brown, about 15 minutes.

    Add the minced garlic and sauté for two minutes, careful not to burn the garlic.

    Add the kale ribbons and stir to coat until they are slightly wilted and turn a vibrant green.

    Pour in the stock, salt, and red pepper flakes and cover the skillet with a lid.

    Cook until the leaves are just tender, about 5 to 7 minutes.

    Finish with a splash of apple cider vinegar.

    Adjust seasonings as necessary and serve.

    Serves 6 to 8
