Broccoli & Cauliflower w/Cheddar Cheese Sauce
1 head broccoli, cut into florets
1 head cauliflower, cut into florets
2 tablespoons (30 ml) butter
3 tablespoons (45 ml) all purpose flour
1 1/2 cups (375 ml) milk
1 cup (250 ml) old cheddar cheese, shredded
dash hot pepper sauce
1/4 teaspoon (1 ml) salt
1/4 teaspoon (1 ml) pepper
dash paprika
Recipe
In a pot of boiling water, cook the broccoli for 2 to 3 minutes, or until tender-crisp.
Drain.
At the same time, cook the cauliflower in a pot of boiling water for 4 minutes, or until it is tender-crisp.
Drain.
Meanwhile, in a saucepan, melt the butter over medium heat.
Blend in the flour & cook, stirring, for 2 minutes.
Gradually whisk in the milk.
Cook, stirring for 3 to 4 minutes or until thickened.
Remove the saucepan from the heat.
Stir in the cheddar cheese until it is melted.
Add the hot pepper sauce, salt & pepper.
Pour 1/3 of the sauce into an 11 x 7 inch (2 L) greased baking dish.
Layer the cauliflower over the sauce.
Pour another third of the sauce over top.
Add the broccoli, then spoon the remaining sauce over top of that.
Sprinkle with paprika.
Bake in a preheated 350ºF (180ºC) oven for about 30 minutes or until heated through.
