Cheesdy Roasted Veggies
2 tbs minced chives
2 tbs butter
1 beet
1 onion, unpeeled, but root and top trimmed
1/4 cup walnut halves, toasted
2 oz blue cheese
Salt and Pepper
1 tbs olive oil
Balsamic glaze
Recipe
Heat oven to 400 degrees.
Coat onion with 1 tsp oil, season with salt and pepper.
Transfer to a baking sheet.
Wrap beet in foil.
Place on baking sheet with onion, bake until vegetables are tender 45 min.
Let beet cool in foil.
Let onion cool slightly, then halve lengthwise, discard dried outer layers.
Peel beet and chop into pieces.
HEAT broiler.
Spread open onion layers slightly, return to baking sheet.
Drizzle each onion half with 1 tsp oil, season,, broil until edges darken.
Divide between 2 plates.
Sprinkle with blue cheese, tent with foil.
In a saucepan, bring beet and 1/4 cup water to a simmer, season with salt and pepper.
Add butter, cook until sauce is thickened.
Spoon beet over onion, top with walnuts, chives and a drizzle of balsamic glaze, then SERVE...
