    Couscous Stuffed Peppers


    1/8 cup sliced almonds, toasted
    2 green bell peppers, quartered
    1/4 pound ground beef
    1 onion, chopped
    1 1/2 tbs butter
    6 oz roasted red peppers, drained
    1/4 cup raisins
    Salt and Pepper
    1 tsp cumin
    1/2 cup Israeli couscous

    Recipe




    HEAT oven to 375 degrees.

    In a pot of boiling salted water, cook couscous until tender.

    Drain, let cool slightly.

    In a skillet, heat 2 tbs butter.

    Add cumin, cook 1 min.

    Add onions, season with salt and pepper, cook until crisp tender.

    Remove pan from heat, let onions cool slightly.

    Transfer one third of the onions to a food processor along with remaining butter.

    ADD couscous to skillet with remaining onions, stir to combine.

    Stir in ground beef, raisins and 1/4 tsp each salt and pepper until combined.

    Fill bell pepper quarters with meat mixture, transfer to a baking dish.

    Cover with foil, bake 15 min.

    Add roasted peppers and1/8 tsp each salt and pepper to onions in food processor, puree until smooth.

    Top stuffed peppers with red pepper puree, bake again, uncovered until bell peppers are slightly tender 20 min.

    Top with almonds and SERVE...
