Fried Greens
2 pounds fresh greens (any type greens)
2 slices lean bacon diced (more if you like bacon)
1/3 cup red bell pepper chopped
3 tablespoons yellow onion chopped
1/4 teaspoon black pepper
1 teaspoon salt Recipe
Wash greens and shake out excess water then cut off tough stems.
Tear leaves into small pieces.
Cook bacon in a skillet over moderate heat until crisp then drain on paper towels.
Pour off drippings retaining 1 tablespoon.
Add red pepper and onion to the retained drippings and saute until soft.
Stir in greens, pepper and salt then saute about 10 minutes until greens are tender.
Top with crisp bacon and serve.
