Healthy and hearty, perfect for a fall day after raking leaves.
List of Ingredients
Gratin of Fall Vegetables
2 tablespoons vegetable oil
2 cups thin strips of small yellow turnips or rutabagas
1/2 cup water
1 red pepper, cut in thin strips
3/4 cup thinly sliced onion
2 cups thinly sliced zucchini
1 cup sliced mushrooms
4 medium tomatoes, cut in chunks
1/2 teaspoon dried oregano
salt & freshly ground black pepper
1 cup shredded lowfat mozzarella cheese
1 tablespoon grated parmesan cheese Recipe
In large skillet, heat oil over medium heat
Add turnip and water, cover and cook for 10 minutes or until tender.
Stir occasionally, Add more water if necessary to prevent sticking.
Add red pepper and onion, cook, stirring for 2 minutes.
Add zucchini and mushrooms, cook, stirring for 3 minutes.
Add tomatoes and increase heat to high, cook, stirring occasionally, 5-10 minutes or till excess moisture has evaporated.
Stir in oregano, season with salt and pepper to taste.
Spoon vegetable mixture into shallow heatproof casserole dish, sprinkle evenly with mozzarella and Parmesan cheeses.
Broil for 3 to 5 minutes or until nicely browned.
