    Lemon Butter Veggies



    fresh chives, chopped 1/4 cup
    mixed vegetables; carrots, parsnips, peas, kohlrabi, squash, broccoli, cauliflower 2 lb
    butter 1/2 cup
    lemon juice 1 tbsp
    lemon rinds 2
    salt & pepper to taste -
    heavy cream 1/2 cup

    Recipe




    Peel or trim vegetables; cut into small pieces.

    Place in shallow pan; add a little water and cover.

    Cook for about 10 minutes until tender-crisp, stirring occasionally.

    Meanwhile; melt butter in pan; add lemon juice, rind, salt and pepper to taste; pour in cream.

    Beat vigorously.

    Drain and serve vegetables on a warm plate, sprinkle with chopped herbs and pour sauce over top.

    Serves 4
