Roasted Peas and Carrots
1 1/2 pounds carrots
2 tbs olive oil
1 tsp cumin
1/2 tsp each coriander
1/2 tsp ground ginger
salt to taste tsp
1 cup thawed frozen peas
Chopped parsley
Lime Juice
Recipe
Heat a baking sheet in a 450 degree oven.
Quarter 1 1/2 pounds carrots lengthwise, toss with 2 tbs olive oil, 1 tsp cumin, 1/2 tsp each coriander and ground ginger, and salt to taste.
Spread on hot baking sheet, roast 20 min.
Stir in 1 cup thawed frozen peas, roast 4 more min.
Toss with chopped parsley and lime juice, then SERVE...
