    Spanish Eggplant


    1 medium eggplant -- peeled and cut into 1/2 in slices
    1/2 cup chopped onion
    1 can whole tomatoes -- 16 oz cut into quarters
    1 1/2 teaspoons salt
    1/2 cup dry bread crumbs
    1/2 cup Parmesan cheese
    1/2 cup chopped green bell pepper
    2 tablespoons sugar

    Recipe




    Combine eggplant, onion, green pepper and mix well. Let stand 10 minutes. Stir in tomatoes, salt and sugar. Place in medium saucepan.

    Cover and cook 10-20 minutes over low heat. Spoon mixture into greased, shallow 2 quart casserole. Sprinkle with bread crumbs and cheese. bake at 350 for 30 minutes.
