    Spring Peas With Dates & Walnuts


    3 kinds of peas mixed with dates, walnuts and shallots.
    If you find olive and walnut oil too expensive as I do, use
    Vegetable oil instead its cheaper.
    2 cups thawed frozen peas or shelled English peas
    1 pound sugar snap peas, trimmed
    1/4 pound snow peas, trimmed and thinly sliced
    1/4 cup each chopped walnuts and chopped pitted dates
    2 tsp walnut oil or vegetable oil
    Pinch of cayenne pepper
    1 medium shallot or small onion, thinly sliced
    Salt
    1 tbs olive oil or vegetable oil

    Bring a pot of salted water to a boil. Fill a bowl with ice Water. If using English peas, add to boiling water and

    Cook until tender, 1 min. Add snap peas and cook until Bright green, 2 min. Then add snow peas and cook 30 Seconds. Drain peas and plunge into ice water.

    -Heat olive oil in a skillet. Add shallot and cook until Soft, 2 min. Add walnuts, dates and cayenne and cook Until nuts are slightly toasted, 1 more min. Drain peas Then add to skillet, if using frozen peas, add them here. Add 1 tsp salt and cook until heated through, 5 min. Add walnut oil and toss. Add more salt to taste, then

    SERVE...

    Makes 6 servings.
