    Stewed Stuffed Artichokes


    12 fresh artichokes, trimmed, stems cut even
    1 pound potatoes, peeled and diced
    2 sprigs rosemary
    2 cloves garlic
    2 teaspoons Italian parsley
    2 teaspoons grated Parmigiano Reggiano
    2 teaspoons bread crumbs
    2 tablespoons butter
    1/4 cup dry white wine
    6 tablespoons extra-virgin olive oil
    salt
    freshly grated black pepper

    Recipe




    In a pan, combine the artichokes with the garlic, 3
    tablespoons olive oil, wine, parsley, salt and freshly ground black pepper.

    Simmer until almost tender.

    In a skillet, sauté the potatoes in the butter and 2
    tablespoons olive oil, together with the rosemary, until crisp.

    Season with salt and pepper to taste.

    Reserve the artichokes. Remove the chokes with a spoon; fill with the potatoes and place in a pan.

    Sprinkle with the parsley, Parmigiano, bread crumbs and
    pepper.

    Drizzle with the remaining olive oil and broil until crisp.

    Serve.
