    Twice Baked Cauliflower


    one 16 oz. bag frozen cauliflower florets
    4 oz. cream cheese
    1/2 cup sour cream
    1/4 cup chopped scallions
    1/4 cup grated parmesan
    6 slices bacon, cooked until crispy, drained, crumbled
    1 cup shredded cheddar

    Recipe




    Preheat oven to 350, spray a pie plate with nonstick spray.

    Steam cauliflower according to pkg. directions.

    Add cream cheese to cauliflower, mash with an immersion blender, food processor or by hand.

    Stir in sour cream, scallions, parmesan, 3/4 cup of cheese, 4 slices of crumbled bacon.

    Spread evenly into pie plate, sprinkle with remaining 1/4 cup of cheese, 2 slices of crumbled bacon.

    Bake 30 minutes or until heated through, bubbly.
