    Baked Potatoes w/Chives


    4 large russet potatoes
    2 tablespoons (30 ml) olive oil
    2 tablespoons (30 ml) butter
    1/2 cup (125 ml) milk
    1/2 cup (125 ml) cream
    1/4 cup (60 ml) horseradish
    salt & pepper
    sour cream
    chives

    Recipe




    Poke the surface of the potatoes a few times with a fork.

    Then, rub the potatoes with the olive oil.

    Place them on baking sheet & bake them in a preheated 375ºF (190ºC) oven for about 1 1/2 hours or until they are done.

    Remove the potatoes from the oven & let them rest for 10 minutes, or until they are cool enough to handle.

    Slice the potatoes in half, vertically & carefully scrape the flesh into a medium bowl, reserving the best of 4 potato skins.

    Add the butter, milk, cream & horseradish to the potatoes & mash them until they are smooth.

    If the mixture is too dry, add more milk.

    Season well with salt & pepper to taste.

    Fill each of the four skins with the mashed potato mixture.

    Place the filled potatoes on a baking sheet & return to the oven, bake until they are lightly golden brown; about 8 to 10 minutes.

    Remove them from the oven, then top each of them with a dollop of sour cream & a sprinkle of chives.

    Serves 4
