    Bacon-Spinach Mashed Potatoes


    2 lbs (910 g) Yukon gold potatoes (about 6), peeled & cut into chunks
    1 tablespoon non-hydrogenated margarine
    1/3 cup fully cooked bacon pieces
    3 garlic cloves, minced
    6 cups tightly packed baby spinach leaves
    1 - 8 oz (250 g) tub Philadelphia Herb & Garlic Cream Cheese Spread

    Cook the potatoes in boiling water in a large saucepan for 15 to 20 minutes, or until the potatoes are tender.

    Meanwhile. melt the margarine in a large skillet over medium heat.

    Add the bacon & garlic, cooking for 2 minutes, stirring frequently.

    Add the spinach to the bacon mixture, cooking & stirring for 1 to 2 minutes, or just until the spinach is wilted.

    Remove the skillet from the heat.

    Drain the potatoes & return them to the saucepan.

    Add the cream cheese spread & mash the potato mixture.

    Stir in the spinach mixture.
