Bacon Mashed Potatoes
1/8 tsp cayenne pepper
2 tbs chopped chives
2 tbs minced oil packed sun dried tomatoes
1/2 cup half and half, warmed
2 cups sliced leeks
2 1/2 pounds potatoes, peeled, cut into 2" cubes
1/2 tsp salt
4 oz low fat cream cheese
4 tbs unsalted butter, melted
1/4 pound bacon, dicedRecipe
BOIL potatoes in salted water until tender.
COOK bacon in a pan until crisp, then remove.
Pour off all but 2 tbs drippings.
Saute leeks in drippings, then stir in bacon.
Drain potatoes, return to pan.
Dry briefly over heat.
Mash potatoes, fold in all remaining ingredients, then SERVE...
