    Ranch Mashed Potatoes


    2 pounds potatoes, peeled, chopped
    3 tbs butter
    1/3 cup half and half
    1 tbs chipotle peppers in adobo sauce
    2 tbs ranch salad dressing mix
    Salt and Pepper to taste

    Recipe




    Place potatoes in a pot.

    Cover with water, bring to a boil, then simmer until tender but firm.

    Drain.

    In saucepan, melt butter, half and half and peppers.

    Place potatoes and butter sauce in bowl.

    Add dressing mix, whip until smooth.

    Season with salt and pepper to taste, then SERVE...

    MAKES 4 SERVINGS.
