Whipped Potatoes
12 medium potatoes, pared,quartered
1/2 c. butter or margarine
1/2 c. half and half
2 eggs
2 tsp. salt
1/8 tsp. pepper
1 Tbsp. plus 1 1/2 tsp. grated
Parmesan cheese
3/4 tsp. paprikaRecipe
Cook potatoes in boiling salted water to cover until
tender; drain.
Beat potatoes, butter, half and half, eggs, salt and pepper until smooth.
Spread potatoes in buttered baking dish, 13 1/2 x 8 3/4 x 1 3/4-inches, swirling top with spoon**.
Heat oven to 350 degrees.
Mix cheese and paprika.
Sprinkle over potatoes.
Bake until potatoes are golden, 25 to 35 minutes.
**Tip: Potatoes can be prepared to this point 4 hours
in advance; cover and refrigerate. Proceed with rest of
directions, increasing baking time to 35 to 40 minutes.
