    Brown Sugared Yams with Vanilla


    6 medium sweet potatoes (5 pounds)*
    3 cups water
    3/4 cup light brown sugar
    8 tablespoons unsalted butter
    1 vanilla bean (split lengthwise and scraped -- discard pod
    to remove beans)
    Juice and grated rind from 1 lemon and 1
    orange
    2 sticks cinnamon
    Salt and pepper to taste

    Recipe




    In a 6-quart saucepan, combine all ingredients and bring to a boil, then simmer and cook until potatoes are tender, about 25 minutes. Remove potatoes with a slotted spoon to a heavy serving bowl and keep warm.

    Boil remaining cooking liquid for 10-15 minutes to reduce by half.

    Pour reduced liquid over the potatoes and serve warm. Before serving, remove cinnamon sticks.

    Serves 4-6

    Note: *Cut sweet potatoes like "steak fries". Halve lengthwise, then width-wise; cut each quarter into thirds.
