    Chocolate Cupcakes with Vanilla frosting


    1 1/2 cups all-purpose flour
    1 cup sugar
    1/4 cup cocoa powder
    1 teaspoon baking soda
    1/3 cup vegetable oil
    1 teaspoon pure vanilla extract
    1 teaspoon distilled white vinegar
    1 cup water
    1/2 cup Enjoy Life mini chocolate chips

    Vanilla Icing

    2 TBSP. vanilla soymilk
    ½ tsp. clear vanilla extract
    ¼ cup shortening
    ¼ cup margarine (I use Earth Balance or Nucoa)
    3 cups confectioners sugar (more or less depending n desired consistency)

    Recipe




    Preheat the oven to 350 degrees.

    Line muffin tins with cupcake liners.

    Combine flour, sugar, baking soda, and cocoa powder in a mixing bowl.

    Next, add the vegetable oil, vanilla extract, vinegar, water, and chocolate chips.

    Mix until smooth.

    Pour batter into cupcake liners.

    Bake for 15-20 minutes or until a toothpick comes out clean from the center.

    Vanilla Icing

    Mix shortening, margarine, vanilla extract, and 2 cups of the confectioners sugar together.

    Add soymilk into mixture and beat together.

    Slowly add remaining cup of confectioners sugar to mixture.

    If icing is too thick, add more soymilk.

    If icing is too thin, add more confectioners sugar.

    Once desired consistency is reached, beat on high for 3 minutes to make light and fluffy.

    Frost cupcakes.
