    Recipe Introduction

    Servings: 50

Notes: Potentially hazardous food. Food Safety Standards: Hold food for service at an internal temperature above 140°F. Do not mix old product with new. Cool leftover product quickly (within 4 hours) to below 41°F.

    List of Ingredients

    3/4 cup red wine vinegar
    1/2 cup olive oil
    1 1/2 teaspoons pepper
    2 teaspoons salt
    300 ounces tuna steaks (50 total - 6 oz each - approximately 1-inch thick)
    White Bean and Tomato Sauce

    Recipe

    1. Combine vinegar, oil, and spices.

    2. Brush oil mixture evenly over both sides of tuna steaks. Arrange tuna on oiled sheet pans. Place pans in preheated 400°F broiler. Cook approximately 5 minutes on each side, until fish flakes easily and reaches 145°F.

    3. Serve tuna over a 3 oz bed of White Bean and Tomato Sauce. Garnish plate with fresh basil or thyme.
