1 package hot chili seasoning mix
2 cups cooked rice
2 cans (14 1/2 oz each) pinto beans, undrained
2 cups low sodium chicken broth
1 can (14 1/2 oz) stewed tomatoes
1 cup chopped green onions
Monterey Jack cheese (optional)
Recipe
1. In a large saucepan, combine all ingredients. Mix well.
2. Bring to a boil. Cover and simmer 15 minutes. Garnish each serving with shredded Monterey Jack cheese, if desired.
Side dishes: Tortilla chips or corn muffins; mixed garden salad.
