    1 (6-1/2 ounce) can minced clams, drained

    2 slices bacon, cooked, drained and chopped fine

    2 tablespoons minced red onion

    1 tablespoon fresh parsley, minced

    2 tablespoons freshly grated Parmesan cheese

    2 tablespoons mayonnaise

    18 (1-1/2-inch) toast rounds, cut from slices of white or whole-wheat bread, toasted lightly

    Recipe



    1. In a small bowl, stir together the clams, bacon, onion, parsley, Parmesan cheese and mayonnaise until the mixture is combined well.

    2. Spread 1 teaspoon of the mixture on each toast round, mounding it, and broil the canapés in a jelly-roll pan under a preheated broiler about 4 inches from the heat for 3 to 4 minutes, or until bubbly and golden.

    Yields 18 canapés
