    Ginger Shrimp

    List of Ingredients

    1-1/2 pounds frozen raw medium shrimp
    4 cups water
    2 tablespoons salt
    1/4 cup soy sauce
    3 tablespoons finely chopped ginger root
    1/4 cup vinegar
    2 tablespoons sugar
    2 tablespoons sweet white wine
    1-1/2 teaspoons salt
    2 to 3 tablespoons thinly sliced green onions (with tops)


    Recipe

    Peel frozen shrimp under running cold water. Make a shallow cut lengthwise down back of each shrimp; wash out sand vein.

    Heat water to boiling. Add 2 tablespoons salt and the shrimp. Cover and heat to boiling; reduce heat. Simmer 5 minutes; drain. Place shrimp in rectangular dish, 11 x 7 x 1-1/2 inches.

    Heat soy sauce to boiling. Add ginger root; reduce heat. Simmer until most of the liquid is absorbed, about 5 minutes. Stir in vinegar, sugar, white wine, and 1/2 teaspoon salt; pour over shrimp.

    Cover and refrigerate 2 to 4 hours
