    Muffins, Ginger


    List of Ingredients


    • 1 egg, beaten
    • 1/4 cup salad oil
    • 1/2 cup Grandma's Unsulphured Molasses
    • 1/2 cup water
    • 1 cup all purpose flour
    • 1/2 cup rye flour
    • 1/4 cup sugar
    • 1/2 tsp salt
    • 3/4 tsp baking soda
    • 3/4 tsp ginger
    • 1/2 tsp cinnamon
    • 1/4 tsp ground cloves
    • 1/2 cup raisins or chopped nuts, if desired


    Instructions


    1. Preheat oven to 400F. Grease muffin pans or line muffin cups with paper liners.

    2. Combine egg, oil, molasses and water; blend thoroughly.

    3. Sift dry ingredients into a mixing bowl. Add raisins or nuts at this point. (use 1/4 cup each if using both.)

    4. Add the combined liquid ingredients and mix only until dry ingredients are moistened. Do not overmix. The batter will appear lumpy.

    5. Fill muffin cups 2/3 full and bake at 400 for 15-20 minutes or until a toothpick inserted in the center comes out clean.



    Final Comments


    Yield: 10 to 12 large muffins. Serve warm with butter or margarine.
