Muffins, Ginger
List of Ingredients
- 1 egg, beaten
- 1/4 cup salad oil
- 1/2 cup Grandma's Unsulphured Molasses
- 1/2 cup water
- 1 cup all purpose flour
- 1/2 cup rye flour
- 1/4 cup sugar
- 1/2 tsp salt
- 3/4 tsp baking soda
- 3/4 tsp ginger
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
- 1/2 cup raisins or chopped nuts, if desired
Instructions
- Preheat oven to 400F. Grease muffin pans or line muffin cups with paper liners.
- Combine egg, oil, molasses and water; blend thoroughly.
- Sift dry ingredients into a mixing bowl. Add raisins or nuts at this point. (use 1/4 cup each if using both.)
- Add the combined liquid ingredients and mix only until dry ingredients are moistened. Do not overmix. The batter will appear lumpy.
- Fill muffin cups 2/3 full and bake at 400 for 15-20 minutes or until a toothpick inserted in the center comes out clean.
Final Comments
Yield: 10 to 12 large muffins. Serve warm with butter or margarine.
