1 cup mashed pumpkin (canned pumpkin is just fine)
1/3 cup water
Recipe
1. Preheat the oven to 350 degrees F. Grease a loaf pan.
2. Stir together flour, baking powder, soda, salt and spices.
3. Cream the shortening with sugar and vanilla before adding eggs to the creamed mixture, one at a time, beating thoroughly after each addition. Stir the pumpkin into the egg mixture.
4. Add the dry ingredients, alternating with water, beating just until smooth. Do not over beat. Pour batter into prepared pan. Bake for 45 to 55 minutes or until done.
5. Turn bread out onto a wire rack and allow to cool before storing it in an air tight container.
