    2 cups all-purpose Flour
    1-1/2 cups sugar
    2 teaspoons baking soda
    2 teaspoons ground cinnamon
    1-1/2 teaspoons salt
    2 jars (7-1/2 ounces each) junior carrots (baby food)
    1/2 cup vegetable oil
    4 eggs, well beaten
    1/2 to 1 cup chopped Nuts

    1. Combine flour, sugar, baking soda, cinnamon and salt in a mixing bowl; blend well. Add carrots, oil and eggs; mix well. Stir in nuts,

    2. Pour batter into two greased and floured 8-1/2 x 4-1/2 x 2-1/2-inch loaf pans. Bake at 375 degrees F. for 55 to 60 minutes or until wooden pick inserted in center comes out clean.

    3. Cool in pans for 10 minutes. Remove from pans; cool on wire racks.
