    List of Ingredients




    3 tablespoons finely chopped green bell pepper

    1/4 cup finely chopped onion

    1 (2-ounce) jar diced pimiento, drained

    3/4 cup (3 ounces) shredded sharp Cheddar cheese

    2-1/2 cups all-purpose flour

    1/4 cup yellow cornmeal

    2 tablespoons baking powder

    1 teaspoon salt

    1/4 teaspoon cayenne pepper

    1/4 cup sugar

    2 eggs, beaten

    1-1/2 cups milk

    1/4 cup shortening, melted

    Recipe



    1. Combine first 10 ingredients in a medium mixing bowl; make a well in center of mixture.

    2. Combine eggs, milk and shortening; add to dry ingredients; stirring just until moistened.

    3. Spoon batter into greased muffing pans, filling two-thirds full. Bake at 400 degrees F. for 20 to 25 minutes.

    Yields 1-1/2 dozen muffins
