1. Cut cream cheese into 12 equal cubes; set aside.
2. Combine cranberry mix, milk, egg, and orange rind; stir just until dry ingredients are moistened.
3. Spoon batter into greased or paper-lined muffin pans, filling three-fourths full. Press 1 cube of cream cheese into middle of each muffin, spreading batter to cover cream cheese.
4. Bake at 400° F. for 25 minutes or until golden brown. Remove from pan and cool slightly on wire racks.
