Bread, Pineapple Nut Bread

This recipe was cut from a Del Monte ad.
List of Ingredients
- 1-1/2 cups firmly packed brown sugar
- 1/2 cup shortening
- 2 eggs
- 4 cups sifted flour
- 2 tsp baking soda
- 3/4 tsp salt
- 1 can (6 oz) frozen orange juice concentrate, thawed
- 1 can (15-1/4 oz) Del Monte crushed pineapple in its own juice
- 1 cup chopped walnuts
Instructions
- Cream sugar and shortening until light and fluffy. Add eggs; beat well.
- Sift together flour, baking soda and salt.
- Alternately add dry ingredients and orange concentrate to creamed mixture; mix well after each addition. Stir in pineapple and nuts.
- Turn into 2 greased and floured 8-1/2x4-1/2 inch loaf pans. Bake at 350 degrees for 50-60 minutes. Remove from pans. Cool on rack.
