Biscuits, Pinwheel Onion

List of Ingredients
- 1 tbsp olive oil
- 1 medium yellow onion, sliced (about 1 cup)
- 1/2 tsp thyme
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 container (8 oz) refrigerated biscuit dough
- 1 egg white, lightly beaten
Instructions
- Preheat oven to 425 degrees. Spray a baking sheet with vegetable cooking spray.
- In a large nonstick skillet, heat oil over medium-high heat. Add onion to skillet. Cook, stirring frequently, until golden, about 5 minutes. Remove from heat. Stir in thyme, salt, and pepper.
- Place dough on a lightly floured surface and pat into a 1/2-inch-thick rectangle. Brush with egg white. Spread onion mixture over dough, leaving a 1-inch border.
- Starting with a short end, roll up dough jelly-roll style. Slice dough into 6 biscuits. (Chill for about 15 minutes before baking. This helps them hold their shape in the oven.) Arrange biscuits, 2 inches apart, on prepared baking sheet.
- Bake biscuits until golden, about 15 minutes. Place baking sheet on a wire rack and cool slightly.
Final Comments
Makes 6 biscuits.
Variation: For cheese biscuits, omit the onion mixture and sprinkle 1 cup shredded Cheddar cheese over the dough in Step 3. Proceed as recipe directs.
