    2 cups all-purpose flour

    2 teaspoons baking powder

    1/2 teaspoon ground allspice

    1/4 teaspoon ground nutmeg

    1/2 cup butter or margarine, softened

    3/4 cup light brown sugar, packed

    2 eggs, beaten

    1/3 cup golden raisins

    2-1/2 cups diced apples

    2 tablespoons raw sugar

    Recipe



    1. Preheat the oven to 350 degrees F. Line a deep 8-inch springform cake pan with aluminum foil and grease with shortening.

    2. Sift the flour into a bowl. Sift in the baking powder, allspice and nutmeg; stir to mix thoroughly.

    3. Using an electric mixer, beat the butter and soft brown sugar together until pale and fluffy. Add the eggs, a little at a time, beating thoroughly after each addition. (If the mixture begins to curdle, add 1 tablespoon flour mixture with the next addition of egg.)

    4. Using a large metal spoon, fold in the flour mixture, followed by the golden raisins and two-thirds of the diced apples. Turn into the prepared pan and level the surface.

    5. Scatter the remaining apples evenly over the surface, then sprinkle over the sugar. Bake for about 1-1/2 hours, until the top is firm at the center. Cover with wax paper after 1 hour to prevent scorching. Let the cake cool for 10 minutes, then remove from pan and peel off the foil. Cool completely on a wire rack.
