1/2 cup EACH celery, onion and green pepper, finely chopped
3 tablespoons flour
2 cups milk
1 teaspoon salt
1/4 teaspoon pepper
1 cup Cheddar cheese, grated
2 eggs, lightly beaten
2 cups finely chopped clams
Recipe
1. Preheat oven to 350 degrees F. Grease a 1-1/2 quart casserole dish.
2. Put bacon and butter in saucepan. Cook on low for 3 minutes. Stir in chopped vegetables; sauté for 5 minutes. Blend in flour. Gradually stir in milk. Cook on low, stirring constantly, until thickened and smooth.
3. Remove from heat; stir in salt, pepper, 1/2 cup of cheese, eggs and clams. Pour into casserole dish. Sprinkle with remaining cheese. Bake for 25 minutes until golden and bubbling.
