Preheat the oven to 350 degrees F. Grease a 6-cup baking dish. 2. Sauté the apples and onions in the butter until very tender but not brown, 10 minutes. Spoon evenly into the baking dish. 3. Season the chicken with the salt and pepper and arrange down the center of the dish, overlapping slightly. 4. Combine the cheeses with the thyme and bread crumbs and sprinkle evenly over the dish. Drizzle the brandy over. 5. Bake at 350 degrees F. until golden. Serves 6
