Glazed Chicken with Peaches Casserole
This is a great, delicious dish for company. It came from Evalyn of Tenafly, NJ.
List of Ingredients
- 1 can (29 oz) sliced peaches (or fruits for salad)
- 2/3 cup mayonnaise
- 1 package herb stuffing (7 oz)
- 1 broiler-fryer chicken, cut in parts or 4-6 chicken breast cutlets
- 1/2 tsp salt
- dash pepper
- 1 jar (12 oz) orange marmalade
Instructions
- Drain fruit and set aside. Reserve 2/3 cups syrup. Stir the reserved syrup into the mayonnaise. Cook, stirring constantly, over medium heat until mixture boils. Add the stuffing and spread into a 13 x 9 x2 inch pan.
- Add the chicken and sprinkle with salt and pepper. Brush with additional mayonnaise.
- Bake in a 350F oven for 1 hour. Melt the marmalade. Arrange the peaches around the chicken. Brush on the marmalade. Bake 15 minutes longer. Garnish with parsley
