    1/2 cup margarine

    1/2 cup sugar

    1/4 cup maple syrup

    1 egg, beaten

    2 cups all-purpose flour

    1 teaspoon baking powder

    1 teaspoon cinnamon

    1/2 cup blackberry jam

    1/2 cup finely chopped walnuts

    Recipe



    1. Preheat the oven to 350 degrees F. Lightly grease and flour a 11-1/2 x 7-1/2 x 1/2-inch aluminum foil pan. Shake out the excess flour.

    2. Beat the margarine and sugar until pale and fluffy. Add the syrup and egg, a little at a time, beating thoroughly. Scrape down the sides of the bowl, if necessary, while beating.

    3. Sift the flour, baking powder and cinnamon together, then beat into the creamed syrup and egg mixture in 3 batches.

    4. Spread 2/3 of the mixture into the prepared pan. Spread the jam over, then spoon the remaining mixture on top and spread it as evenly as possible with the back of a spoon. Sprinkle over the walnuts and bake just above the center of the oven for about 35 to 40 minutes, until golden. Leave to cool in the pan, then cut into 16 slices.
