Cream butter in a large mixing bowl; gradually add sugar, beating well. Add carrots, pecans, raisins, molasses, egg, vanilla extract, and orange rind, mixing well. 2. Combine flour and baking powder in a small bowl, stirring well. Add to creamed mixture; stir until well blended. 3. Drop batter by teaspoonfuls 2 inches apart onto lightly greased cookie sheets. 4. Bake at 375° F. for 7 to 10 minutes or until lightly browned. Remove from cookie sheets, and cool completely on wire racks. Yields 6 dozen
