Apple Bread Pudding

8 slices day-old whole-wheat bread, cut into 1/2-inch cubes (about 4 cups)
2 medium red delicious apples, peeled, cored and chopped (about 1-1/2 cups)
1/4 cup golden raisins
2 cups skim milk
1/2 cup maple syrup
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 egg white
1 tablespoon granulated sugar
Frozen whipped topping, thawed (for garnish)
Recipe
1. Preheat oven to 350 degrees F. (325 degrees F. if using a glass dish.) Spray a 2-quart casserole with vegetable cooking spray. Combine bread, apples and raisins in the dish. Mix well.
2. In a medium bowl, combine milk, syrup, eggs, vanilla and cinnamon. Mix well.
3. In a medium mixing bowl, using an electric mixer set on high speed, beat egg white until foamy. Gradually add sugar, beating until stiff peaks form. Gently fold beaten egg white mixture into milk mixture until blended. (Avoid deflating the beaten egg white.) Pour egg mixture over bread cubes in casserole. Let stand for 5 minutes.
4. Bake until center is firm and a knife inserted in center comes out almost clean, about 55 minutes. Place on a wire rack and cool 5 minutes. Garnish with whipped topping. Serve warm.
