1-1/2 (20-ounce) cans apricot pie filling
1/2 teaspoon cinnamon
2 tablespoons orange marmalade
TOPPING:
1/4 cup all-purpose flour
2 tablespoons soft brown sugar
2 tablespoons butter or margarine, diced
3 cups crushed Cornflakes
Recipe
1. Preheat the oven to 375 degrees F.
2. Put the pie filling in a bowl, add the cinnamon and marmalade and stir until evenly blended; turn into a 1-1/2 quart heatproof pie plate.
3. To make the topping: sift the flour into a clean bowl; stir in sugar. Add the butter and cut it in. Stir in the Cornflakes.
4. Sprinkle the topping evenly over the apricot filling; bake for 30 minutes, until the topping is lightly browned. Serve hot with vanilla ice cream, if desired.
