Black Cherry Whip

1 pound black cherries, pitted
2 tablespoons sugar
1-1/2 cups cold milk
1 (3-1/2 ounce) package instant vanilla pudding and pie filling
3/4 cup whipping cream
Recipe
1. Put the cherries in a heavy-bottomed saucepan, reserving about 2 tablespoons for decoration. Sprinkle with sugar; cover and cook gently for about 5 minutes until the cherries are very soft. Remove from heat. Crush them to a rough pulp with a fork and leave to cool.
2. Pour the milk into a bowl; add the pudding. Beat at lowest speed until blended, for approximately 1 to 2 minutes.
3. Pour the mixture into a heavy-bottomed saucepan. Bring slowly to a boil and cook for 1 to 2 minutes, stirring constantly until smooth. Pour into a bowl and cover the surface closely with plastic wrap to prevent a skin from forming and leave to cool.
4. Beat the cool pudding until it is smooth and creamy. Add it to the cherries and blend evenly.
5. Using clean beaters, whip the cream until it stands in soft peaks. Using a metal spoon, lightly fold the cream through the black cherry pudding to give a marbled effect. Spoon into 6 glass serving dishes and decorate with the reserved cherries. Cover and chill for 1 to 2 hours in the refrigerator. Serve well chilled.
