1. Preheat the oven to 375 degrees F. Grease a 1-quart ovenproof dish, then stand the dish in a roasting pan.
2. Pour the milk into a saucepan and stir in the vanilla extract; heat gently until almost boiling.
3. In a large bowl, lightly beat the eggs and sugar together.
4. Slowly pour the hot milk onto the egg mixture, beating until smooth; strain into the prepared baking dish. Half fill the roasting pan with hot water.
5. Sprinkle the top of the custard with nutmeg and cinnamon. Bake for about 1 hour, until custard is set. (Press the tip of a knife into the center; if no milk rises the custard is cooked.)
