Fish Fillets, Cajun-Style

1/3 cup all-purpose flour
1 tablespoon paprika
2 teaspoons chili powder
1/2 teaspoon freshly ground black pepper
4 thin, skinless, white fish fillets, such as sole, cod or flounder (6 ounces each)
1 tablespoon vegetable oil
Orange peel strips, for garnish
Recipe
1. On a sheet of waxed paper, combine flour, paprika, chili powder and pepper, mix well. Dredge fish in flour mixture, shaking off excess; turning to coat. In a large nonstick skillet, heat oil over medium-high heat.
2. Add fish to skillet. Cook, turning once, until fish becomes opaque and flakes easily when tested with a fork, about 5 minutes.
3. Place fish on individual serving dishes. Garnish with orange peel strips, if desired and serve immediately.

Note from Healthy Meals: “This Cajun spice mixture adds a nice fiery kick to chicken or turkey as well as fish. To always have the mixture on hand, double or triple the recipe. Prepare as directed in step 1. Store mixture in a sealed plastic bag or in an airtight storage container at room temperature for up to 1 month, or in the freezer for up to 3 months.”
