    Fish Fillets Florentine

    List of Ingredients




    1-1/2 pounds fresh spinach
    6 ounces light cream cheese
    1/4 cup capers
    1 egg, beaten (or egg substitute)
    1/3 cup Parmesan cheese
    1/2 onion diced
    1/8 teaspoon nutmeg
    1-1/2 pounds of fish fillets
    1 teaspoon tarragon

    Recipe



    1. Preheat oven to 375 F.

    2. Wilt spinach in a hot skillet sprayed with a nonstick cooking spray. Remove to paper towels and squeeze out excess moisture. Chop spinach.

    3. Return spinach to skillet; add the next 6 ingredients. Heat on medium heat. Add salt and pepper. Simmer for about 12 to 15 min until cream cheese is melted and sauce is heated through. Set aside; keep warm.

    4. Arrange fillets in a shallow baking dish or cookie sheet. Rub fillets with tarragon, salt and pepper.

    5. Bake about 15 min or until fillets flake easily. Remove to serving platter and spoon spinach sauce over each fillet and serve.

    Serves 3
