2 (5 to 6 ounce) fish fillets (calls for catfish but any will work)
salt
1 cup buttermilk
1 egg
1 teaspoon baking powder
1 tablespoon vinegar
1 tablespoon Worcestershire sauce or soy sauce
Olive oil (or vegetable oil)
1 cup salsa, drained of excess liquid (mild, medium
or hot - homemade is best!)
1/2 cup grated sharp cheddar cheese (or your favorite)
FISH FRY BREADING:
1/2 cup cornmeal
1/2 cup white flour
1 teaspoon salt
1/2 teaspoon red pepper
1 teaspoon garlic powder
Recipe
1. Combine the ingredients for fish fry breading; set aside.
2. Pat the fish dry with a paper towel. Salt lightly and set aside in a glass dish for 5 minutes.
3. Whisk together the buttermilk, egg, baking powder, vinegar and Worcestershire. (This will foam so do it in a larger bowl.) Pour this mixture over the fish and marinate (in the fridge) for 30 minutes.
4. Heat a thin layer of oil in a skillet. Pour the marinade off of the fish and dredge in the cornmeal/flour mixture. Lightly brown on both sides. Don't worry about cooking through as this is going in the oven.
5. Place fillets in a baking dish. Spread salsa evenly over fish and then sprinkle cheese over the salsa. Bake at 350 degrees F for about 15 minutes until cheese is melted.
