Salmon Supreme
List of Ingredients
1/4cup fresh lemon juice
1 teaspoon Dijon-style mustard
4 salmon steaks (5 ounces each)
FOR THE SAUCE:
1/2 medium roasted red bell pepper
1/2 cup nonfat plain yogurt
1/2 cup low-fat sour cream
1 teaspoon dried tarragon
1/8 teaspoon salt
Fresh tarragon sprigs for garnish
Recipe
1. Preheat broiler. Line broiler pan with foil.
2. In a small bowl, combine lemon juice and mustard. Mix well. Brush mustard mixture over salmon steaks. Cover loosely with plastic wrap; refrigerate for 10 minutes.
3. Meanwhile, to prepare sauce, in a blender or food processor fitted with the metal blade, process roasted pepper until smooth. Add yogurt, sour cream, tarragon and salt. Process until just combined. Set aside.
4. Place salmon on prepared pan. Broil 4 inches from heat, turning once, until fish flakes easily with a fork, about 5-6 minutes. Spoon sauce, in equal portions, on plates. Place salmon steaks over sauce.
