    1 Golden Delicious apple, cored and chopped

    1 tablespoon firmly packed dark brown sugar

    2 teaspoons molasses

    1 (1-inch) strip of lemon zest removed with a vegetable peeler, chopped

    3 tablespoons water

    Pinch of salt

    1/2 cup well-chilled heavy cream

    1/8 teaspoon cinnamon

    1/4 teaspoon vanilla extract

    2 tablespoons chopped almonds, toasted lightly

    Recipe



    1. In a small saucepan, combine the apple, brown sugar, molasses, zest, water and salt. Bring the liquid to a boil; simmer, covered, for 10 minutes, or until the apple is softened.

    2. Force the mixture through the fine disk of a food mill set over a metal bowl. Set the bowl in a larger bowl of ice and cold water. Stir the mixture until it is very cold.

    3. In a bowl, combine the cream, cinnamon and the vanilla,. Set the bowl in the bowl of ice water and beat until it holds stiff peaks. Fold the cream into the apple mixture until the mixture is just combined.

    4. Spoon the fool into 2 stemmed glasses and sprinkle it with the almonds. Chill the fool until ready to serve.

    Serves 2
